Sandy Holmes RDNThe author, Sandy Holmes, is passionately plant-based. After receiving a Bachelors of Science degree in dietetics from Purdue University, Sandy moved to Colorado to pursue her career and her love for skiing and the outdoors.

In her job as clinical dietitian for over 30 years at Aspen Valley Hospital Sandy works closely with clients to help them achieve lifestyle change. She provides healthy cooking classes, and developed and teaches a class called “Leaning Toward A Plant-Based Diet”.  Sandy has helped changed the culture of Aspen Valley Hospital’s food service.  Because of vegan options now offered to staff and patients the hospital was recently recognized for providing the best hospital food in the nation.
